This afternoon’s slav(er)ing over a hot stove produced a dish of chicken, peppers and mushrooms in a tangy tomato, mustard and honey sauce.
The char grilled chicken breasts were diced on the griddle, then blended with the sizzling onion, peppers and mushrooms, steadily absorbing the coriander, ginger and garlic laden olive oil before the plum tomatoes, chicken stock and other saucy substances were thrown in. Next the transfer to a casserole dish for a little oven cooking.
The dish is currently resting, prior to it’s return to the oven tomorrow dinnertime. The par-boiled basilled potatoes anticipate a roasting at the same time.
Domestic chores performed, I once more permit myself to collapse onto a welcoming sofa.
